Cajun Grill Mix
Add some heat to your next grilled chicken, beef, pork, or fish with this spicy grill mix. For authentic Cajun flavor without all of the heat, reduce the amount of cayenne.
Ingredients
1 cup paprika
3 tablespoons cayenne pepper
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons black pepper
1 tablespoon salt
1 tablespoon dried rosemary
Directions
Mix together all of the ingredients and store in an airtight container in a cool, dry place.

Jamaican Jerk Seasoning
While the kids will giggle at the name of this seasoning, they will really enjoy the spicy-sweet flavor when used on chicken, pork, or beef.
Ingredients
3 tablespoons onion powder
3 tablespoons dried onions
3 tablespoons dried thyme
3 tablespoons brown sugar
2 tablespoons allspice
2 tablespoons freshly ground black pepper
2 tablespoons cayenne pepper
1 tablespoon freshly ground nutmeg
1 tablespoon ground cinnamon
1 teaspoon ground cloves
Directions
Mix together all of the ingredients and store in an airtight container in a cool, dry place.

Traditional Southern Barbecue Spice Rub
Here is a traditional spice mixture for seasoning barbecued chicken, beef, and pork. It is especially well suited for spare ribs.
Ingredients
1/4 cup paprika
1/4 cup brown sugar
2 tablespoons chili powder
2 tablespoons cayenne pepper
2 tablespoons cumin
2 tablespoons cracked black peppercorns
1 tablespoon salt
Directions
Mix together all of the ingredients and store in an airtight container in a cool, dry place.
