1] Ants-On-A-Log
Slice stalks of celery, spread peanut butter in groove. Sprinkle with raisins. Variations: 1) aphids-on-a-log (sunflower seeds), 2) gnats-on-a-log (currents). `````````````````` 2] Mozzarella Cheese Sticks 1 LB packaged mozzarella/2 eggs, beaten/1/2 C flour/1 C flavored bread crumbs/Veg oil for frying Slice mozzarella into flat wedges (it's easier to fry this way). Set up 3 bowls, 1 w/ flour, 1 w/ egg, 1 w/ breadcrumbs. Coat each piece of cheese first w/ flour, then egg, then breadcrumbs, throw IMMEDIATELY into hot oil to fry. Fry a minute or two on each side until coating is golden brown and cheese is melted. Sprinkle w/ lemon juice and serve ````````````````````````````````` 3] Lemon Buttermilk Pudding Cake 8 oz granulated sugar/ 1/4Ts.p salt/ 1/4C all-purpose flour/2 oz unsalted butter, melted 2 3/4oz fresh lemon juice/1 large egg yolk/1 1/2C buttermilk/ 3 large egg whites/ Heat oven to 350f. Place all ingredients except whites & half of the sugar in blender; process to combine. Set aside. Beat whites & sugar & fold into cake mixture w/ whisk or spatula; pour into buttered 8x8 baking pan. Set cake pan in larger pan & pour hot water into pan to come half way up sides of cake pan. Bake 45 mins until top is lightly browned. Serve w/ whipped heavy cream ```````````````````````````````````` 4] Caterpillar In A Cocoon Use bundt cake & filling recipe or box, but bake in Cupcake tins (greased-do not use Cupcake papers). When cool, dip or cover with thin layer of frosting, then roll in or sprinkle coconut on top. Soften (but don't melt!) caramel candies, coat with melted chocolate and/or roll in nuts/sprinkles/coconut. `````````````````````````````````````````````````` `` 5] Butterfly Snacks Use pretzels as butterfly wing frames, stick them together with soft caramel candy or peanut butter. Sprinkle chocolate chips on top. `````````````````````````````````````````` 6] Chocolate Pretzel Spider Stick 2 Oreo cookies together with chocolate frosting. Make 8 curved legs by breaking bow-tied pretzels, attach them around middle of spider by sticking them into the chocolate frosting. Use M & M's for eyes on front, 'glued' with frosting. As a variation, use sandwich crackers, instead of sandwich cookies, stuck together w/ peanut butter. ````````````````````````````` 7] Spider Cake 1 boxed cake mix .Black Frosting .1 box green gelatin .8 black licorice sticks .8 gumdrops, M & M's or other round candy for eyes Prepare any boxed cake mix. Bake it in 2 metal bowls, 1 bigger than the other. Once unmolded, cut bigger one (the"body") in half, horizontally. CAREFULLY scoop out an adequate cavity in each half. FILL with well-whipped set green Jello, and reattach the halves. Frost both cakes black, arrange on serving platter. Use licorice sticks as legs. Use 2 BIG green gumdrops and 6 little ones as eyes. When cake is cut into, it spurts green goop, just like a real spider when stepped on. `````````````````````````````````````````````````` ```````````` 8] "Dirt" Cake One 20-oz. pkg. chocolate sandwich cookies, crushed .1/2 stick margarine .1 8-oz. pkg. cream cheese .1 C powdered sugar .3-1/2 c. milk .2 pkg. instant chocolate pudding .1 12-oz. tub whipped topping .1/4 c. mini marshmallows (beetle grubs) .1 plastic flower pot .1 plastic flower .plastic ants/beetles .gummy worms Cream margarine, sugar, cream cheese. In another bowl mix milk and pudding. Let sit until thick. Stir in cool whip, mix w/ cream cheese mixture. Make sure pot holes are plugged. Put 1/3 of cookie crumbs in bottom of pot. Add 1/2 of cream cheese mixture. Repeat cookie crumbs and cream cheese mixture, adding some gummy worms and mini marshmallows. Add extra crumbs on top (to look like dirt). Refrigerate over night. Add flower(s), bugs, and rest of worms on top. Use a trowel to serve. ````````````````` `````````````````````````````` 9] Ice-Cream Igloos 12 prebaked Cupcakes, any flavor. spoons. 1 qt ice cream. cookie sheet. waxed paper or foil. canned white frosting. toothpicks. chocolate chips (optional) Scoop out center of each Cupcake. Fill each Cupcake with ice cream. Freeze Cupcakes overnight until ice cream is solid. Next day, remove Cupcakes from freezer. You may want to remove only a few at a time so others will stay cold in freezer. Place Cupcakes upside down on cookie sheet lined w/ foil. Spread frosting on each Cupcake to make it resemble a small white igloo. Make vertical and horizontal lines in frosting with a toothpick to make it look like blocks of snow. (You may want to add chocolate chips to outline a door.) Keep Cupcakes in freezer until ready to serve. `````````````````````````````````````````````````` ```````````````````` 10] Fried Bananas Bananas, 1 ts honey (per banana) Peel banana. Using knife, cut it in half, once lengthwise and once again crosswise through middle, so there are 4 pieces about same size. Heat some butter (about ½ a Tb) in frying pan. When butter melts, place pieces of banana, cut sides up, in pan. May need to lower heat a little. Fry bananas until edges are soft. Flip over carefully and fry cut sides. After about a minute dribble honey over bananas in pan. Turn off stove. After about ½ a min carefully slide pieces of banana and honey onto plate. `````````````````````````````````````````````````` `````````

11] Pig Cookies
FROSTING/ DECORATING: 1/2 c. butter or margarine/4 c. confectioners' sugar/2 t. vanilla extract/6 T. milk/3 to 4 drops red food coloring/Pink sugar wafer cookies/36 large marshmallows, halved/Reese's candy bar sprinkles. COOKIES: 1 c. butter or margarine, soft/1 1/2 c. sugar/2 eggs/1 c. (8 oz.) sour cream/1 t. vanilla extract/3 c. all-purpose flour/1 t. baking powder/1/2 ts salt Cream butter and sugar. Add eggs, sour cream, vanilla; mix well. Combine dry ingredients; add to creamed mixture; mix well. Drop by Tb onto ungreased baking sheets. Bake at 375~10-12 min. or until edges are lightly browned. Cool on wire racks. Melt butter. Add sugar, vanilla, milk and food coloring; mix until smooth. Frost cookies. Cut sugar wafers into triangles; place 2 on each cookie for ears. With toothpick, poke 2 holes in each marshmallow half for nostrils; press lightly brown candy bar sprinkles into holes. Place noses on cookies. Add dark brown candy bar sprinkles for eyes. 6 dozen `````````````````````````````````````````````````` ``````` 12] Bee Bread 1 C corn syrup .1 1/4 C powdered sugar.1 C peanut butter .1 1/4 C powdered milk Combine ingredients, roll into 1-2" balls, then roll balls in powdered sugar to keep from sticking together. ```````````````````` 13] Birthday Noodles with Peanut Sauce 2 Tb smooth peanut butter or sesame paste .1/4 C hot water .3 Tb soy sauce .1 Ts honey .4 C (1 l) cooked Chinese-style noodles or spaghetti .2 scallions, cut in 1/2-in pieces (if desired) .Bean sprouts (if desired) .Chopped peanuts (if desired) In large bowl, use fork to stir p-butter or sesame paste w/ water until creamy. Stir in soy sauce and honey; set aside. Drain cooked noodles and add to bowl w/ peanut butter mixture. Toss well. Refrigerate until ready to serve. Serve noodles cold, topped with scallions, sprouts, or chopped peanuts, if desired. Eat with chopsticks. Unbleached Flour/3 Egg Yolks, Lg., Beaten 1 1/2 Ts Thyme/3/4 Ts Salt/ 2 TB Unbleached Flour; PLUS 2 TB butter/1/2 Ts. Mustard; Dry/3/4 c Dairy Sour Cream Put grated Cheddar Cheese in bowl, add sour cream and yolks, mixing well after each addition. Add flour salt thyme and dry mustard, which have been mixed well in separate bowl or Cup. Melt butter in skillet over low heat; drop batter by Ts into skillet. Cook over med. heat until lightly browned on bottom. Loosen edges w/ spatula, turn; lightly brown other side. Makes about 2 dozen 3-in. cakes. 6 servings. `````````````````````````````````````````````````` ```````` 15] Breakfast Kabobs 2 c water .1 Tb lemon juice .2 Golden Delicious apples .1 LB reduce-fat kielbasa or breakfast sausages .1 bunch fresh sage (optional) Heat oven to 400 F. Lightly coat baking sheet w/ veg oil cooking spray. In small bowl, combine water and lemon juice. Core apples and cut each lengthwise into quarters; cut each quarter into 4 wedges. Soak slices in lemon water 1 min; drain. Cut kielbasa diagonally into 24 1/2-in-thick oval slices. On skewers, alternately thread 4 slices or apple and 3 slices kielbasa, beginning and ending w/ apple. (Kielbasa should be threaded thru skin side-not cut side.) Roast kabobs, turning occasionally, 15-20 mins or until apple slices soften and kielbasa browns. Set on bed of sage leaves, if desired, serve. ````````````````````````````````````````````````` 16] Coconut Macaroons 1/4 C flour .2 C shredded coconut .2/3 C sweetened condensed milk .1 Ts vanilla extract Preheat oven to 325 F. Grease cookie sheet. Stir flour and coconut in large mixing bowl with wooden spoon. Add milk and vanilla. Mix well. Drop dough by ts onto cookie sheet. Make sure they are at least 2 in apart. Bake 15 mins or until cookies turn golden brown. Remove from sheet with spatula. Place on cooling rack 10 mins. Makes 24 Coconut Macaroons. `````````````````````````````````````````````````` `````` 17] Fruity Brownie Pizza 1 box brownie mix/1 container strawberry cream cheese/1/3 C powdered sugar/fresh fruit in season (kiwi, berries, bananas, etc.)/chopped nuts (optional)/chocolate sauce (optional) Prepare brownie mix as on box. Spread on lightly greases pizza pan. Bake 350 7-10 mins until done in center. cool. In small bowl, mix strawberry flavored cream cheese with enough powdered sugar until creamy. Spread over cooled brownie. Top w/ sliced fruits. Sprinkle nuts and drizzle chocolate sauce over if desired. Cover w/ plastic wrap and cool in fridge 2 hrs. Store leftovers in fridge. Eat in 2-3 days `````````````````````````````````````````````````` ````` 18] Banana Orange Sunrise 3 C orange juice/1/4 C honey/2 medium bananas, sliced/Ice cubes/Cranberry juice cocktail Place orange juice, honey and bananas in blender. Add ice cubes until mixture measures 6 CUP. Cover; blend on low speed 30 seconds or until smooth. Divide juice mixture between 8 glasses; pour cranberry juice on top. ````````````````````````````````````````` 19] Dirt Dessert 5 zip lock sandwich bags/3 C milk/1 pkg instant pudding (any flavor, chocolate works well)/25 oreo or chocolate sandwich cookies/5 gummy worms/5 Cups or small pots (suitable to eat out of) Count 5 cookies each; put them into zip lock bag (make sure bag is zipped tight). Pound cookies into crumbs (fine or coarse depending on desired consistency of "dirt"). Prepare pudding according to pkg directions. Spoon pudding into C or small pots. Top it w/ cookie crumbs to make it look like potting soil. Put in a gummy worm. Decorate with a flower if desired. `````````````````````````````````` `````````````````````````````` 20] Chipmunk Candy 1 large mixing bowl/1 fork/4 Tb evaporated milk/3 C confectioners' sugar/Black or red string licorice Measure evaporated milk into mixing bowl. Mix confectioners sugar slowly into milk using fork until all sugar has been added.Knead it with hands until mixture becomes smooth and easy to handle. Shape mixture to resemble chipmunks. Use licorice for whiskers and eyes. Can also add a few drops of food coloring to change color of chipmunks.Makes approx 10 small chipmunks. ``````````````````````````` ``````````````````````````````````

Add Vanilla & Eggs slowly. Scrape Down. DO NOT CURDLE. Sift Dry Ingredients together & fold under by Hand. Fill into papered Bar Tins. Bake in Hot Oven 220'c Till Top is Light Brown - Cut Center w/ Sharp Knife & Bake out. Cool at 180c. `````````````````````````````````````````````````` `````````````````````````` `````` 23] Alphabet Chocolates 1 large, chocolate bar (not milk chocolate) .Sugar sprinkles and mini-candies Unwrap chocolate bar; place in sealable plastic bag. Microwave on high 1 min at a time until chocolate melts. Watch closely- chocolate melts fast. Place piece of wax paper on cookie sheet. Snip a tiny hole in corner of bag. Slowly squeeze chocolate onto wax paper in shapes of letters. Decorate letters w/ colored sugar or mini-candies. Refrigerate letters until harden. Wrap in plastic wrap; tie w/ bow. Makes 4 to 6 letters, depending on size. `````````````````````````````````````````````````` ````````` 24] Pizza Sticks 1-11oz refrigerated bread sticks/pepperoni/shredded mozzarella cheese/1 tb parm cheese/1 tb Italian seasoning/1 tb garlic powder/pizza sauce Pre-heat oven to 350, roll out sticks on ungreased cookie sheet, lay 2 pepperoni on end; sprinkle w/ some mozzarella cheese and fold bread stick over and twist, mix together parm, Italian seasoning, and garlic powder; sprinkle over top of twisted bread stick. Add more mozzarella if desired; bake 5-8 mins or golden brown. Dip in heated pizza sauce. `````````````````````````````````````` 25] Cinnamon Apple Chips 2 C unsweetened apple juice .1 cinnamon stick .2 Red Delicious apples In large skillet or pot, combine apple juice and cinnamon stick; bring to a low boil while preparing apples. With sharp knife, slice off 1/2-in from top and bottom of apples and discard or eat. Stand apples on either cut end and saw gently crosswise into very thin (1/8-in) rings, rotating apple as necessary to get even slices. Drop apple slices into boiling juice; cook 4-5 mins or until slices are translucent and lightly golden. Meanwhile, heat oven to 250F. With slotted spatula, remove apple slices from juice and pat dry. Arrange slices on cake-cooling racks, being sure none overlap. Place racks on middle shelf in oven; bake 30-40 mins until apple slices are lightly browned and almost dry to touch. Let chips cool on racks completely before storing in airtight container. Drain off excess fat. Stir in remaining ingredients. SKILLET: Heat mixture to boiling, reduce heat & simmer, covered, stirring occasionally, until rice is tender, about 35 mins. (A small amount of water can be added if necessary.) OVEN: Turn mixture into ungreased 2-qt. casserole. Cover & bake at 350F., stirring occasionally, until rice is tender, about 50-60 mins. (A small amount of water can be added if necessary.) ``````````````````````````````` 27] Banana Blasters Popsicle Sticks/Bananas/Honey/Wheat Germ (Optional)/Granola (Optional) Peel banana; cut it in 2 equal parts. Place a Popsicle stick in flat end. Pour honey onto paper plate. Roll banana in honey until fully coated. Proceed to sprinkle either wheat germ or granola on the banana. ````````````````````````````````` 28] Sunshine Cheesecake This treat is topped w/ slices of bright oranges. The slices must be cooked very slowly, or pulp will fall away. Begin preparing cheesecake 1 day before serving. Crust: 1 1/2 8-oz bags gingersnap cookies, ground (about 3 C)/6 Tb (3/4 stick) butter, melted/1 1/2 Ts (generous) minced orange peel (orange part only). Filling: 1 1/2 C fresh orange juice/1 3-in piece unpeeled fresh ginger, thinly sliced (about 1/3 C)/Four 8-oz pkg cream cheese, room temp/2/3 C sugar/1 Tb minced orange peel (orange part only)/1 Tb vanilla extract/8 oz white chocolate, melted/4 large eggs. Candied Oranges: /4 C water/2 C sugar/3 seedless oranges (unpeeled), cut into paper-thin slices/Fresh mint leaves Crust: Stir all ingredients in med bowl until crumbs are moist. Press crumbs onto bottom and 2 in up sides of 9x2 3/4-in springform pan. Filling: Preheat oven to 350°F. Boil orange juice and ginger in heavy med saucepan until reduced to 3 Tb, about 12 mins. Using electric mixer, beat cream cheese, sugar, orange peel and vanilla in large bowl until smooth. Strain reduced orange juice; add to bowl. W/ mixer running, add chocolate; beat until combined. Reduce speed to low. Add eggs 1 at a time, beating until just combined. Pour batter into crust. Bake cheesecake until top is dry and sides puff slightly (most of cheesecake will jiggle when shaken), about 50 mins. Transfer to rack; cool. Cover; chill overnight. (Can be prepared 2 days ahead.) Oranges: Cover rack w/ waxed paper. Combine water and sugar in heavy wide shallow pot. Stir over med heat until sugar dissolves. Simmer 5 mins. Add oranges slices 1 at a time. Adjust heat so syrup bubbles only around edges of pan. Cook oranges 1 hr. Turn over top layer of oranges; cook until oranges are translucent and orange peels are tender, about 1 hr longer. Arrange oranges in single layer on prepared rack. Let dry 1 hr. Boil sugar syrup until thick, about 6 mins. (Can be prepared 6 hrs ahead.) Run small knife around edges of cheesecake. Loosen pan sides; remove. Overlap orange slices and atop cheesecake. Reheat orange syrup over low heat if necessary. Brush over orange slices. Garnish w/ mint, serve. Serves 10-12. `````````````````````````````````````````````````` ```````` 29] Berried Treasure Strawberries, cut in half/Blueberries/Raspberries/Whipped topping, from a pressurized can Place berries in dinner plates or in small, shallow bowls. Top w/ whipped topping, allowing small parts of berries to show. Let kids "dig" thru whipped topping w/ fork/spoon in search of the berries. `````````````````````````````````````````````````` `````` 30] Corn Bread Sticks 1 C all-purpose flour/1 C yellow, white, or blue cornmeal/2-4 Tb sugar/1 Ts baking powder/1/2 Ts baking soda/1/2 Ts salt/2 beaten eggs/1 C buttermilk/2 TB cooking oil In large mixing bowl stir together flour, cornmeal, sugar, baking powder, baking soda, salt. Make well in center of dry mixture. In med mixing bowl combine eggs, buttermilk, and cooking oil. Add egg mixture all at once to dry mixture. Stir just till moistened. Batter should be lumpy. For corn bread, pour batter into lightly greased 8x8x2-in baking pan. Bake in preheated 425 oven 20-25 mins, or till toothpick inserted near center comes out clean. Remove from oven; cool slightly. For corn sticks, spoon batter into well-greased corn stick pans, filling molds 2/3 full. Bake in preheated 425 oven 12-15 mins, or till golden brown. Remove; cool slightly on rack. 31] Apple Lasagna
Cheddar shredded Cheddar Cheese, 1C. Ricotta Cheese, 1 Egg. slightly beaten, 1/4C. Sugar, 1Ts. Almond Extract 2 cans {20ozs each** Apple Pie Filling, 8 uncooked Lasagna Noodles, cooked, rinsed-drained, 6 Tb Flour, 6TB packed Brown Sugar, ¼ C Quick-cooking oats, ½ Ts ground Cinnamon, dash Nutmeg, 3TB Margarine, 1C. dairy Sour Cream, 1/3 C packed Brown Sugar Combine cheddar and ricotta cheese, egg, white sugar and almond extract in med. bowl; blend well. Spread 1 can apple pie filling over bottom of greased 13X9-in. pan. Layer 1/2 of the noodles over filling, spread cheese mixture over noodles. Top w/ remaining noodles, then remaining can of apple pie filling. Combine flour, 6TB brown sugar, oats, cinnamon and nutmeg in small bowl. Cut in margarine until crumbly. Sprinkle over apple pie filling. Bake in preheated 350F oven 45 mins. Cool 15 mins. Meanwhile, prepare garnish by blending sour cream and 1/3C. brown sugar in small bowl until smooth. Cover; refrigerate. Serving Suggestions: Cut lasagna into squares and garnish w/ sour cream mixture. `````````````````````````````````````````````````` ```````````````````` 32] Peanut Butter Soup 2 med onions, chopped .1 garlic clove, crushed.1 Tb veg oil.1 28-oz can crushed tomatoes .1 13 3/4-oz can chicken broth .4 C water .2 large yams, peeled, cut into 1-in chunks.1 C creamy peanut butter.1/4 Ts cayenne pepper .1/4 Ts salt .2 C cooked chicken pieces (if desired).1/2 C crushed peanuts (optional) In large saucepan, sauté onions + garlic in oil over med-low heat 5 mins. Add tomatoes, broth, water, yams. Cook over med-low heat 20 mins or until yams feel soft when poked w/ fork. Stir in p-butter, cayenne pepper, salt. Turn off heat; cool 30 mins. Puree soup in blender/food processor. Pour back into saucepan; warm it up over low heat. Pour soup in bowls and sprinkle w/ cooked chicken and crushed peanuts, if desired. ```````````````````````````````````````````` 33] Cool Watermelon Slushes 6 ice cubes/2 C seedless pieces watermelon/1 Tb sugar or honey Put ice cubes in blender or processor. Mix ice cubes until crushed. Add watermelon pieces; blend until shake is slushy. About 1 minute. Add sugar/honey; blend 10 seconds. Pour slush into tall glasses. Makes 4 ````````````````````````````````````` 34] Bubble Pizza 2 tubes Buttermilk Bisquits/2 C spaghetti or pizza sauce Cut each Biscuit in 4 pieces (total 80 chunks) and place in mixing bowl. Add 2 C sauce and any pizza ingredients: meat (cooked & drained), desired pizza toppings/cheese. Turn into greased baking pan; bake 20 min. at 325 f. Velveeta (about eight of the sandwich slices) Combine everything except Velveeta; mix well. Place half the meat in 8" loaf pan. Make indentation lengthwise in meat, leaving about 1/2" from ends and sides. Fill with Velveeta; top w/ remaining meat, pressing to seal edges. Bake at 350f for 45-60 mins. ````````````````````````````````` 72] Snickers Cheesecake 1 pk (9-oz) chocolate wafer cookies/4 tb Butter, melted/3 pk (8-oz) cream cheese, soft/1 c Sugar/4 Eggs/1 tb Vanilla extract/ 2 c Heavy cream/1 1/2 LB Snack-size Snickers bars; each cut into sixths/ Fudge Topping Preheat oven to 325. In processor, grind cookies into fine crumbs. Add butter; process until well blended. Press into bottom and about 1 in. up sides of 9-1/2-10-in springform pan. In large bowl, beat together cream cheese and sugar w/ electric mixer on med speed until smooth, 1-2 mins. Beat in eggs, 1 at a time. Beat in vanilla and 1 C cream; beat 3-4 mins. Fold in 1-1/2 C cut-up Snickers pieces. Turn into crumb-lined pan. Bake 1 hr and 15-25 mins, or until cheesecake is almost set but center still jiggles slightly. cool to room temp. Sprinkle remaining candy pieces over top of cheesecake. Refrigerate 4-5 hrs before serving. Run knife around edge of pan to loosen cake; remove springform side of pan. Just before serving, drizzle fudge topping over cake. Knead dough into balls, make a deep well in center of each ball w/ handle of wooden spoon. (If mixture is too sticky, add more powdered milk.) Break off marble-sized piece of mixture and roll into a ball for bear's head. Roll another ball about twice that size for his body and attach to head. Roll out 6 tiny balls and pinch flat. Attach to head for ears and body for arms and legs. Dip blunt end of toothpick into food coloring and paint on eyes, nose, mouth, and coat buttons. Place bear on wax paper-lined foil tray or pie pan until set. Sieve Dry ingredients, Place in bowl, Blend together on low speed scrape down, whisk 4 mins on top speed, & whisk 4 mins on med. speed. Weigh off into sponge tins at 200g. Bake at 190c approx. 18-20 mins ``````````````````````````````````````````` 78] Cheesy Popovers 2 Eggs, beaten 1/4 Ts Sage, crushed/1 c Milk 1/2 Ts Basil, crushed /3/4 Ts Salt 1 c Unbleached flour/1/2 Ts Thyme, crushed 1/2 c Grated cheddar cheese Combine seasonings w/ milk and eggs; add flour and cheese; mix until just blended. Pour into well-oiled muffin tins, filling 2/3 full. Do not preheat oven. Place muffin tin in oven, and heat to 450f. Bake 30 mins. Remove from oven; turn off heat. Pierce popovers on 4 sides at right angles. Return to oven (do NOT turn on heat). Allow popovers to dry in oven about 10 mins. Serve immediately `````````````````````````````````````````````````` ```````````````````` 79] Cranberry Raspberry Star Cookies 3/4 C (1 1/2 sticks) unsalted butter, room temp/1 Ts vanilla extract/1/4 Ts grated lemon peel/1 C sugar/1 large egg/1 egg yolk/2 1/4 C flour/1/4 C cornstarch/1/4 Ts (generous) ground cloves. Filling: 1 C fresh cranberries/1/4 C sugar/3/4 C raspberry preserves/Powdered sugar Using electric mixer, cream butter, vanilla and lemon in bowl until light. Gradually add sugar and beat until blended. Beat in egg and yolk. Combine flour, cornstarch and cloves. Beat half of dry ingredients into butter mixture. Stir in remaining dry ingredients. Gather dough into ball (dough will be soft). Divide dough into 4 pieces; flatten each into disk. Wrap each in plastic; chill 1 hr. Preheat oven to 350°F. Butter heavy large nonstick cookie sheets. Roll 1 dough piece out (keep remainder refrigerated) on floured surface to thickness of 1/8 in. Cut out star-shaped cookies using floured 3-in star cutter. Transfer to prepared cookie sheets, spacing 1/2 in apart. Repeat rolling and cutting w/ second dough piece. Gather scraps; reroll, chilling dough briefly if soft. Cut out more 3-in star cookies. Transfer to prepared cookie sheets. Chill cookies 10 mins. Bake until edges are golden, about 10 mins. Cool on rack. Roll 3rd dough piece out on lightly floured surface to thickness of 1/8 in. Cut out star-shaped cookies using floured 3-in star cutter. Cut smaller star out of center of each 3-in star using 1 3/4- to 2-in star cutter. Transfer star outlines to prepared cookie sheets using floured metal spatula as aid. Repeat rolling and cutting star outlines w/ 4th dough piece. Makes about 36 sandwich cookies ``````````````````````````````````````````````` 80] Baked Cheese Mush 2 C water/1/2 Ts Salt/1/2 C coarse cornmeal/ med. finely chopped onion/1 1/2 C shredded mozzarella and Monterey Jack cheeses,combined/4 slices bacon, cooked crisp-crumbled/1/4 oz taco seasoning mix/ beaten egg with 1 Tb cream/cracker crumbs/Spicy or hot tomato relish (opt)/Meat gravy (opt) Using double boiler or 2 pots, 1 of which can fit into other, heat water about 1 1/2 in. deep in bottom half. Put 2 C and salt in upper half of double boiler; bring to boil on direct heat. Stir in cornmeal slowly into salted water. Cook several mins. over direct heat, stirring constantly. Add onion, 1/4 packet taco seasoning mix, mix in well and put smaller pot into larger pot w/ boiling water. Cover; cook 40 mins. Set Oven to 350f.Add bacon; continue cooking another 5 mins. Remove from heat; stir in cheese. Pour hot mush into loaf pan; cool several hrs or until well set. Cut into 8 equal slices. Beat together egg and cream. Put cracker crumbs in dish. Sprinkle pepper on slices. Place grid/rack onto baking sheet, large enough to hold 8 slices off baking sheet. Brush slices w/ egg wash; press into cracker crumbs; lay carefully onto baking rack. 81] Chocolate Coconut Macaroon Logs 2/3 C Sweetened condensed milk/1 tb Unsweetened cocoa powder/1 ts Vanilla/3 CFlaked coconut/2 Egg whites/28 oz Semisweet chocolate, melted (opt) In large bowl, blend together condensed milk, cocoa and vanilla; stir in flaked coconut until well mixed. Beat egg whites until stiff peaks form; fold into coconut mixture. Drop by Tb onto lightly greased baking sheets; shape into logs about 3 in. long. Bake in 300°F oven 30 mins or until golden brown and firm. Cool on wire racks. Dip 1 end of each log into chocolate (if using). |
