I would like to start my Christmas candies and cookies. Can anyone tell me if I can freeze things, and if so the best way to thaw them???

I always freeze my Christmas goodies. I put the cookies in the clear plastic boxes you buy at the store all I do is put wax paper in between the layers of cookies. Just take them out, let them thaw right in the container you can even take out as many as you need this way with the paper in between they come a part very easy. As for candy I make a lot of chocolates you can leave most everything out in a cool place I refrigerate my chocolate covered paenut butter ball and my chocolate covered pretzels. I hope this helps.
